Winemaking Philosophy

At Siduri, we believe winemaking should be just as honest and transparent as Pinot Noir itself
(and yes, Chardonnay too).

From sourcing top-tier fruit to taking a light-touch approach in the winery, and skipping fining for both varietals and filtration for Pinot, every move we make is about letting the vineyard do all the talking. It’s why each Pinot and Chardonnay we create delivers its own unique personality—aromas, flavors, textures, the whole works. You might fall head over heels for one over the other, and honestly? That’s the beauty of it.

We aim to produce Pinot Noir and Chardonnay that best captures the distinct flavors and characters of a given vineyard site and region. To that end, we believe in minimal intervention or “gentle” winemaking and will not want to do anything to the wine that isn’t absolutely necessary.

Stellar Sites. Exceptional Fruit.

We’re fanatical (in the best way) about preserving the unique character of every vineyard we work with. No heavy-handed winemaking here—we’re all about letting each site’s personality shine. Every wine is crafted block by block, clone by clone, and barrel by barrel to highlight its individuality and build layers of complexity. This meticulous process also gives us the freedom to handpick only the best, most harmonious components for the final blend of Pinot Noir or Chardonnay.

Less is More.

When it comes to our single-vineyard and regional expressions of Pinot Noir and Chardonnay, we’re all about capturing the true essence of the vineyard and the bigger regional vibes. Our philosophy? Keep it simple (and gentle). We believe wine shines brightest when it’s allowed to do its thing, so we step in only when absolutely necessary. Minimal intervention, maximum character—that’s how we roll.

Pure Roots. No Shortcuts.

For us, the beauty of Pinot Noir and Chardonnay lies in how each reflects its roots. That’s why we skip the fining and filtration for Pinot Noir and only do filtration for Chardonnay. Our mission is to create the most authentic expression of each site or region we touch.

Matt Revelette, our Pinot-preoccupied winemaker, took a detour from Kentucky to the vineyards and never looked back. His motto? “Cook whatever you want, just enjoy the wine.” Sounds like a plan to us.

The Pinot (and Chardonnay) Playbook, Unfiltered

With Pinot Noir, we vinify each vineyard block and clone separately, beginning with a four-day cold soak. We ferment the wines with the same yeast each time, in some years using up 20% whole clusters for extra complexity. During fermentation, we do punch downs twice a day to extract bold color and flavors, then taper to once daily as the wine evolves. After aging in partially new French oak, the wine is bottled unfined, unfiltered, and built to age beautifully under a screw cap for over a decade. The whole process is wonderfully simple.

Our approach to Chardonnay is equally straightforward: we press whole clusters to keep the juice pure and pristine. A touch of malolactic fermentation adds creamy weight, and after ten months in 20% new French oak with monthly lees stirring, it’s bottled filtered but unfined. The result? Vibrant, textured perfection that tells a story of place.
