Our block in the Papera Ranch Vineyard is 97% Zinfandel and features very high levels of natural acidity. With so much Zinfandel in the mix, our goal has always been to make sure we express this character in the wine, which means that we are most concerned with preserving the aromatic nature of the grape. To that end, we ferment a bit cooler in one ton bins, with punchdowns done by hand during the cold soak and fewer punchdowns once the must starts fermenting (where tannins are extracted more). The 2014 Novy Papera Vineayrd Zinfandel shows beautiful aromatic expression with lighter aromas of red fruit and flowers. The palate is rich and forward, with crisp acidity carrying the flavors through to a long, lingering finish.
